Izmir devint au XVIIe siècle un grand centre séfarade et le berceau de Shabbetaï Tsevi. Port cosmopolite tourné vers le commerce du Levant, elle accueillit imprimeurs, poètes et rabbins de renom. Sa culture judéo-espagnole, ses chants et sa gastronomie en firent un foyer majeur du séfaradisme ottoman jusqu'au XXe siècle.
