Fils d'Abraham (Adolf) Wertheim, fondateur en 1875 à Stralsund d'un modeste commerce de textile et d'articles manufacturés. Avec son frère Hugo puis seul, Georg développa l'entreprise familiale en la plus grande chaîne de grands magasins d'Allemagne, dont l'immense magasin phare de la Leipziger Platz à Berlin. La famille juive Wertheim fut spoliée (« aryanisation ») par le régime nazi après 1933 et contrainte de céder ses parts.
