Né à Strasbourg le 27 mai 1925, mort à Paris le 20 août 1988, apparenté à Raymond Aron. Agrégé de philosophie (1953), directeur d'études à l'EHESS, il a fondé l'histoire culturelle de l'alimentation en France avec Le Mangeur du XIXe siècle (1973) et marqué le débat intellectuel avec Les Modernes (1984).
