Arnold Cahn est un médecin allemand né à Worms le 11 avril 1858. Après le gymnase, il étudie la médecine à l'université de Strasbourg, dont il sort diplômé en 1881; assistant à l'hôpital universitaire de 1882 à 1885, il devient privat-docent cette dernière année puis professeur assistant en 1895. Cahn a publié de nombreux articles dans les revues médicales, sa spécialité étant la physiologie de la digestion.
