Moïse Israël ben Isaac Büdinger est un enseignant à Metz à la fin du dix-huitième siècle et au début du dix-neuvième, spécialisé en grammaire et littérature hébraïques, formant de nombreux grammairiens et stylistes hébreux. Il publie à Metz plusieurs ouvrages, dont « Em le-Mikra », manuel d'hébreu (1816), un essai sur les lois rituelles de Pourim (1816), un « Mahzor » en neuf volumes avec traduction allemande de Prosper d'Alsace (1817), un discours pour bar-mitsva (1819) et un commentaire sur les prières pénitentielles (1822); il réédite aussi, en 1769, le « Menorat ha-Maor » d'Isaac Aboab avec traduction judéo-allemande de Moses Frankfurter.
