The laws concerning wine distinguish yayin nesech, wine connected to idol worship, from stam yeinam, wine produced or handled by non-Jews, both forbidden to drink under halakhah. To be kosher, wine must be produced by observant Jews; when boiled (mevushal), it is freed from certain handling restrictions. These rules shaped a distinctive Jewish viticulture.
