On Passover, the Torah forbids possessing and eating chametz, that is, leavened grain products. Preparations include thorough cleaning, the candlelight search for chametz (bedikat chametz), its destruction (biur chametz), and its symbolic sale to a non-Jew. Ashkenazim additionally abstain from kitniyot (legumes), a custom not followed by most Sephardi communities.
