La maison de banque la plus importante de la ville était celle des frères Cohen, qui comptaient parmi leurs clients, tant à Saint-Symphorien qu'à Vienne, des clercs, des prêtres, des nobles et des bourgeois éminents (_ib._ p. 74). Malgré la faveur du dauphin, les Juifs de Saint-Symphorien payaient des péages routiers spéciaux ; par ex., un Juif à pied quatre deniers, un Juif à cheval ou une Juive enceinte huit deniers (Depping, "Les Juifs dans le Moyen Age," p. 162). Le 30 mars 1396, trois jeunes Juifs furent accusés d'avoir causé l'arrestation d'un tailleur chrétien, Antoine Escoffier, sur une accusation fictive, et de surcroît d'avoir moqué et insulté le nom de Jésus. Traduits devant le conseil du dauphin, ils furent condamnés à payer une amende de 200 francs en or ("Revue des Etudes Juives," ix. 259).
